The pressure profiling system uses a permanent electromagnetic gear pump to let you shape the extraction curve, either through five programmable presets plus a sixth semiautomatic profile via the group-mounted paddle, or in real time using the paddle alone. The fully saturated group thermally bonds directly to the dual stainless steel boilers, giving you the temperature consistency that serious work with lighter roasts demands. Real-time extraction graphing on the colour touchscreen means you can see what each profile is doing and repeat what works.
